Grain Free Energy Balls- Three Recipes

Is anyone else obsessed with matcha? I love drinking matcha lattes and using matcha in desserts and I’m sure I’d put it on everything if I could. Last year, I stopped drinking coffee and I do miss it but I found that matcha became my new favorite coffee shop drink. There is nothing better than enjoying a coconut milk matcha latte while reading a book (or people watching).

When there is no matcha latte to wake me up another option is a good old energy ball. Whether you call them energy balls, protein balls or bliss balls, or maybe you never heard of them at all, energy balls are these healthy little nuggets of sweetness. They’re delicious and totally guilt-free. You can get pretty creative with the ingredients but I love the matcha flavor because it reminds me of a coconut milk matcha latte.

Here I created three grain free recipes, matcha when you’re in need of a caffeine kick with a splash of coconut, cookie dough when you’re craving something sweet and comforting, and pistachio lemon when you just want something tangy and crunchy. They’re seriously easy to make and require no baking or mess. I love making a few batches of different flavors and having the perfect sweet snack throughout the week. Which one is your favorite?

Matcha Energy Balls

1 cup almond flour

1 tbsp. coconut flour

2 tsp. matcha powder

2 tsp. unsweetened shredded coconut flakes

Pinch of sea salt

2 tbsp. coconut oil, melted

2 tbsp. maple syrup or a sugar-free alternative

Directions:

Place the flours and matcha into a medium bowl and stir until well combined (making sure the matcha is evenly distributed). Add the rest of the ingredients and stir until combined. Form the dough into 8 1-inch balls and enjoy.

Cookie Dough Energy Balls

1 cup almond flour

2 tbsp. coconut flour

Pinch of sea salt

2 tbsp. coconut oil, melted

2 tbsp. maple syrup or a sugar-free alternative

1 tsp. vanilla extract

2 tbsp. cacao nibs or mini dark chocolate chips

Directions:

Place all ingredients except the cacao nibs into a medium bowl and stir until well combined. Mix in the cacao nibs and form into 8 1-inch balls. Enjoy!

Pistachio Lemon Energy Balls

1 cup almond flour

2 tbsp. coconut flour

Pinch of sea salt

2 tbsp. coconut oil

2 tbsp. maple syrup or sugar-free alternative

2 tsp. lemon zest

Juice of 1/2 medium lemon

2 tbsp. pistachios, de-shelled and chopped into small pieces

Directions:

Place all ingredients except the pistachios into a medium bowl and stir until well combined. Mix in the pistachios and form into 8 1-inch balls. Enjoy!

**If the dough is too sticky you can add aditional almond flour. If it’s too dry you can add additional coconut oil or maple syrup.

** The leftovers should be refrigerated and will stay fresh for a week.
