Triple Chocolate Cookies and a Merry Christmas

Triple Chocolate CookiesAs preperations for Christmas take place I though that I’ll write a quick post. Merry Christmas to everyone! I am so excited about the food I will be eating and the family I will be spending time with. I love how the holidays remind us to appreciate the people we have in our lives. I am sharing a cookie recipe, because cookies are such an important part of Christmas. These triple chocolate cookies are a chocolate explosion in your mouth and a perfect cookie to make for your loved ones! Also, here are a couple of pictures I took that keep me in the Christmas spirit:

Preheat oven to 350 F. In a large bowl mash together ¼ cup softened unsalted butter , ½ cup packed dark brown sugar, ¼ cup granulated sugar with a fork until well blended. Add ¼ cup canola oil and 1 large egg and beat until creamy. Mix in 1 tsp. vanilla extract.

In a medium bowl, whisk together ½ cup all purpose flour, ½ cup whole wheat flour, ¼ cup unsweetened cocoa powder, and ¼ tsp. salt. Add dry ingredients to the wet ingredients and mix well. Stir in 1/3 cup coarsely chopped dark chocolate, 1/3 cup coarsely chopped milk chocolate, and 2/3 cup chopped walnuts and mix well. Using a tablespoon, scoop batter onto an ungreased cookie sheet. Bake for 12 minutes. Cool on a cooling rack and enjoy!
