Nutella Swirl Banana Muffins

I have to get this out of the way. School has been stressing me out and I have not been baking as often as I used to. When I get back in to the kitchen after a long absence, I can’t believe how much I miss it. Baking is an important part of my life, but every now and then life gets so hectic that I get stuck in a rut. Somehow baking always lifts my spirits up. It’s a great way to de-stress.

My advice is to pick a recipe you know and love, that way you can’t mess it up. I knew I wanted to bake muffins, because they are simple to put together and baking time is short. These Nutella Swirl Banana Muffins definitely lifted my spirits up. They have this nutella sweet spot in the middle that put a smile on my face. Preheat oven to 375 degrees F. Line 12 muffin cups with muffin papers. In a large bowl, combine 1 cup all-purpose flour, 1/2 cup whole wheat flour, 1 tsp. baking soda, 1 tsp. baking powder, 1/2 tsp. salt. In a smaller bowl, beat together 2 mashed over-ripe bananas, 3/4 cup white sugar, 1 lightly beaten egg, and 1/3 cup oil. Add the banana mixture to the dry ingredients and mix until just moistened. Using an ice cream spoon, divide the batter among the muffin cups. Spoon 1 tsp. Nutella onto each muffin and swirl together. Bake in preheated oven for 15-17 minutes, until a toothpick inserted into the center of the muffin comes out clean.
