On Saturday we had Ina Garten’s baked shrimp scampi for dinner. I don’t think I have ever watched Barefoot Contessa without my stomach growling. There is just something fresh and simple about her recipes that I think everyone finds appealing and fun to recreate. This was also the first time I deveined shrimp. I went into the store motivated to buy shrimp to devein even if the already cleaned and deveined shrimp looked much less scary. It was fun and for a second there I felt like Ina with all these fresh herbs flying around and the smell of garlic invading the house.
I served the shrimp with sautéed kale and brown rice, which complemented the shrimp perfectly. The whole dinner was very light and fragrant, but it definitely left us satisfied. The only thing I would do differently would be to brown the shrimp a little more. I also ended up with a dish a little on the watery side so next time I will cut down on the butter.
